Sausage & Pepper Heroes

Ingredients

Sausage & Pepper Heroes

  • 4 Southside Market & Barbecue Original Beef Sausages
  • ¼ cup - Melted butter
  • 1 tsp - Dried basil
  • 4 Sub rolls
  • 1 cup - Mozzarella cheese, shredded
  • ½ cup - Bacon, sliced
  • 1 Red bell pepper, sliced
  • 1 Green bell pepper, sliced
  • 1 Red onion, sliced
  • 1 tbsp - Worcestershire sauce
  • Ground black pepper to taste
  • Freshly chopped chives for topping

Chipotle Mayo

  • 1 cup - Mayonnaise
  • ¼ cup - Yellow mustard
  • 2 tbsp - Honey
  • 1 tbsp - Pureed chipotle in adobo sauce
  • Juice from half a lime

Preparation

Sausage & Pepper Heroes

  1. Preheat your grill for a two zone cooking, having hot coals on one end and nothing on the other;
  2. Place the bacon in a cast iron skillet over direct heat and cook halfway then add the chopped bell peppers, onions, Worcestershire and black pepper; Sauté until the peppers are soft and lightly roasted;
  3. Move the skillet to indirect and place 4 sausage links over direct heat; close the lid and cook for about 6 minutes per side;
  4. Mix the melted butter with dried basil then brush on top of each sub roll; Assembly each sandwich with sautéed peppers and mozzarella cheese on top then bring back to the grill over indirect heat for 10 minutes;

Chipotle Mayo

  1. Mix all ingredients then pour in a squeeze bottle;
  2. Stock in fridge until ready to use;
