Nacho Wings

Ingredients

  • 2 lb - Chicken wings
  • 2 tbsp - Canola oil
  • 2 tbsp - Paprika
  • 2 tbsp - Brown sugar
  • ½ tbsp - Cayenne powder
  • ½ tbsp - Salt
  • ½ tbsp - Black pepper
  • 1 cup - Shredded cheddar cheese
  • 1 cup - Shredded mozzarella cheese
  • ¼ cup - Red onions, chopped
  • ¼ cup - Pickled hot peppers
  • 2 tbsp - BBQ sauce
  • Juice from half a lime
  • Hickory wood chips (optional)

Preparation

  1. Preheat your grill for medium heat;
  2. Mix the wings with canola oil, then season with paprika, brown sugar, cayenne powder, salt and pepper;
  3. Grill the wings over direct heat for about 8 to 12 minutes per side with the lid close; Stay close to the grill and rotate the wings frequently if needed to prevent them from burning;
  4. In a cast iron skillet, place the wings vertically next to the edge of the skillet to hold them in place then fill the entire pan; Cover with cheese, chopped red onions, pickled hot peppers, a line of BBQ sauce and the juice from half a lime;
  5. Cook in indirect for 8 more minutes or until the cheese have melt evenly;

Serve with ranch or blue cheese dipping
