Bacon Mac n’ Cheese Poppers

Ingredients

  • 8 Jalapeños
  • 2 cup - Cooked macaroni
  • 8 Slices of bacon
  • ⅓ cup - Butter, melted
  • ⅓ cup - All purpose flour
  • 1 cup - Cooking cream
  • 6 oz - American cheese
  • 4 oz - Jack cheese
  • ¼ cup - Beer
  • 1 tbsp - Chipotle in adobo sauce, chopped
  • 1 tsp - Orange zest
  • ½ tsp - Black pepper
  • 1 cup - Wood chips for smoking

Preparation

  1. Preheat your grill for indirect;
  2. In a large saucepan, met the butter over medium heat and stir in he flour to make a roux; Add the cooking cream and american cheese and whisk until the cheese is melted completely; add the jack cheese, beer, chipotle, orange zest and black pepper and simmer until you get a semi thick cheese sauce; Add the cooked macaroni and stir well;
  3. Cut each jalapeño in half and remove the interior with a spoon; Fill each jalapeño with mac and cheese, then wrap with bacon;
  4. Place the poppers on the grill for indirect and toss a cup of wook chips onto hot coals for smoking; Close the lid and cook for around 30 minutes at 350°F; Serve and enjoy.
