In a large saucepan, met the butter over medium heat and stir in he flour to make a roux; Add the cooking cream and american cheese and whisk until the cheese is melted completely; add the jack cheese, beer, chipotle, orange zest and black pepper and simmer until you get a semi thick cheese sauce; Add the cooked macaroni and stir well;
Cut each jalapeño in half and remove the interior with a spoon; Fill each jalapeño with mac and cheese, then wrap with bacon;
Place the poppers on the grill for indirect and toss a cup of wook chips onto hot coals for smoking; Close the lid and cook for around 30 minutes at 350°F; Serve and enjoy.
