Jamaican Jerk Chicken Wings

Ingredients

  • 20 Chicken wings
  • 2 tbsp - El Yucateco XXXtra Hot Sauce
  • ⅓ cup - Sugar
  • ¼ cup - Scallions, chopped
  • 1 Garlic clove, minced
  • 1 ½ tbsp - Dried thyme
  • 1 tbsp - Paprika
  • 1 tbsp - Allspice
  • 1 tbsp - Ground ginger
  • 1 tbsp - Salt
  • ½ tbsp - Ground black pepper
  • 1 tsp - Ground cinnamon
  • ½ tsp - Ground nutmeg
  • ¼ cup - Olive oil
  • Juice from 1 lime

Preparation

  1. In a bowl, mix the chicken wings with olive oil until they are coated evenly; Mix all remaining ingredients together then apply on the wings; Let marinate 2 to 4 hours;
  2. Preheat your grill for a two zone cooking having hot coals on one end and nothing on the other;
  3. Place the chicken wings on the hot grate over direct heat and sear for 3 to 4 minutes per side; Move the wings to indirect and close the lid; Cooking time: 30 to 45 minutes at 350°F;
  4. Remove the chicken wings from the grill and serve;
