Jalapeño Sausage Mac & Cheese



  1. Preheat your grill for a two zone cooking – having hot coals on one side and nothing on the other; If you are using a gas grill, turn half the burners to high and leave the other half closed;
  2. In a preheated cast iron skillet, sauté the onions, red bell peppers and garlic in melted butter; Add 3 links of diced Southside Market & Barbecue Jalapeño Cheddar Sausage, 3 tbsp of flour and 2½ cups of half-and-half; Simmer for 5 minutes;
  3. Place 3 cups of cooked elbow macaroni in an aluminum foil pan and combine with the sausage and vegetable mixture from the skillet; add the american cheese, swiss cheese and mozzarella cheese and mix well; Top with romano cheese, sliced jalapeño cheddar sausages and bread crumbs;
  4. Place the mac & cheese over indirect heat and add a few wood chunks onto hot coals for smoking; Close the lid and cook for 30 to 45 minutes at 350°F;
  5. Top with freshly chopped chives and chipotle hot sauce (optional) and serve.
