Ingredients

Chicken

  • 16 Chicken thighs
  • ¼ cup - Olive oil
  • Hickory wood chips for smoking

Honey Barbecue Rub

  • ¼ cup - Honey powder
  • 1 tbsp - Paprika
  • 1 tbsp - Guajillo powder
  • 1 tbsp - Garlic powder
  • 1 tbsp - Onion powder
  • 3 tsp - Kosher salt
  • 2 tsp - Black pepper

Honey Barbecue Sauce

  • 2 cup - Ketchup
  • 1 cup - Honey
  • 1 cup - Dark brown sugar
  • ¾ cup - White vinegar
  • ¼ cup - Worcestershire
  • 2 tsp - Onion powder
  • 2 tsp - Garlic powder

Preparation

  1. Preheat your smoker at 250°F;
  2. Brush the chicken on both side with olive oil, then combine all Honey Barbecue Rub ingredients into a bowl and use to generously season the chicken thighs on all side;
  3. Place the chicken thighs in your smoker with hickory wood chips for smoking; Cook for 45 minutes at 250°F;
  4. Combine every Honey Barbecue Sauce ingredients into a sauce pan and simmer for 10 minutes; Set aside;
  5. Brush the chicken thighs with honey barbecue sauce and place them back in your smoker  for another 20 minutes, or until the internal temperature of the meat reaches 165°F on an instant read thermometer; Serve and enjoy.
