
Ingredients
Chicken Satay
- 1 lb - Boneless chicken breasts, cut into strips
- 3 tbsp - Fish sauce
- 1 tbsp - El Yucateco Chipotle Hot Sauce
- 1 Scallion, thinly sliced
- ½ Cucumber, thinly sliced (optional for serving)
- 1 Lime, cut into wedges (optional for serving)
- ¼ Red onion, sliced (optional for serving)
Chipotle Peanut Sauce
- ½ cup - Creamy peanut butter
- 3 tbsp - El Yucateco Chipotle Hot Sauce
- 2 tbsp - Soy sauce
- 2 tbsp - Lime juice
- 1 tbsp - Honey
- 1 Small garlic clove, finely chopped
- 2 tbsp - Water
Preparation
- Preheat your grill for direct heat at 450°F.
- Thread chicken strips onto metal skewers. Drizzle with fish sauce and Chipotle hot sauce and season with salt and pepper to taste.
- Grill chicken skewers approximately 4 minutes per side, or until nicely charred.
- In a bowl, vigorously whisk all the ingredients for the chipotle peanut sauce until smooth. Season with salt and pepper to taste.
- Serve the chicken satay with a chipotle peanut sauce. Sprinkle with chopped scallions and serve with cucumber slices, red onions and lime wedges (optional).
