Beer, Beef & Bacon Chili

Ingredients

  • 1 ½ lb - Ground Beef
  • ½ lb - Sliced Bacon
  • 2 ½ Chopped Red Onions
  • 2 Chopped Tomatoes
  • 1 Sliced Jalapeño
  • 1 ½ tbsp - Minced Garlic
  • 2 can - Red Kidney Beans
  • 1 tbsp - Freshly Chopped Oregano
  • 2 tsp - Salt
  • 1 tsp - Ground Cumin
  • 1 tsp - Corn Starch
  • 1 tsp - Pepper Flakes
  • 1 ½ tbsp - Chili Powder
  • 1 tsp - Smoked Paprika
  • 1 tbsp - Black Pepper
  • Lime Juice
  • 1 ½ can - Tomato Paste
  • 1 tsp - Worcestershire Sauce
  • 2 ½ cup - Beef Broth
  • 1 Large Can of Beer

You will also need Oak and apple wood chips, soaked in water for about 1 hour.

Preparation

  1. Preheat your grill for indirect, having hot coals on one side and nothing on the other;
  2. Divide the ground beef into 3 to 4 patties, then sear them over hot coals for about 3 minutes per side;
  3. Once the meat patties are on the grill, place a cast iron casserole over high heat and start cooking the sliced bacon;
  4. Toss some soaked wood chips directly on the coals, then move both the meat patties and casserole to indirect and cook for another 15 minutes;
  5. Add all the ingredients, including the meat patties, into the casserole and give it a good mix, then cook with the lid closed in indirect for about 1 hour at 350°F/175°C.
